So I feel like it’s part of my job on this blog to help you discover not only new recipes that you might try and love, but also new food products that may never have graced your pantry or fridge before. I’m not all that adventurous myself, but Seth is obsessed with trying new things so we usually end up with one or two oddball items in our shopping cart each week. Some we love, some…eh, not so much. Here are a few things that we’ve loved and have stayed in our rotation for weeks now.
So the first thing we have today is coconut milk, specifically Trader Joe’s light coconut milk. I find myself going through 1-2 cans of this/week and my favorite way to use it is to cook quinoa in it (just replace coconut milk for the water) or to make a sauce with coconut milk, miso and dijon mustard and wilt a whole bunch of kale in it. It’s pretty much the only way I can eat kale. Everyone raves about how obsessed they are with kale but I find it to be pretty bitter, even baked into infamous “kale chips”. But drown it in coconut milk? Now we’re talking. I have a few recipes coming in the new few weeks using coconut milk, but one of my favorites is this quinoa and shrimp thai stir fry.
Next up is an even better version (didn’t think it was possible) of original Biscoff spread. CRUNCHY. I’m highly addicted to crunchy peanut butter-smooth just does nothing for me. So when I saw that Biscoff came in a crunchy variety, I was psyched. At this point I’ve only really eaten this off of a spoon or on top of saltines (both excellent choices btw) but I’m definitely looking forward to using it in a cookie recipe. I bought this at Wegman’s which is the only place in my area where I can find Biscoff of any variety. Get some.
This next product is not really “new” so to speak but I have a new-found obsession with it. You may recall that I’m highly addicted to caramel popcorn–or really any popcorn for that matter. In my quest to control my after dinner binge eating (it was becoming a serious problem), I’ve become addicted to these 100 calorie bags of Kettle Corn. It feels like you’re eating alot for only 100 calories and it’s SO good. Sweet, salty, crunch…MMM. Even better with melted chocolate chips and peanut butter drizzled on top. I mean..what?
Sidenote: I actually smuggled this box onto the plane on our trip home from Florida because my checked bag was over the 50 lb weight limit. And no, throwing it out was NOT an option.
You may recall that I received some green lentils from my April Foodie Pen Pal and was excited to give them a try. I’ve never cooked lentils before and didn’t even know if I would like the taste. Well, turns out Seth + I LOVE them. These organic green ones from Wegman’s are my favorite-no pre-soaking required and they are done in 30 minutes. I’ve been mixing them with quinoa for a base to almost all of our dinners recently. The bulk bins in whole foods have soo many different varieties, I can’t wait to explore them all!
Going with the lentil train is this amazing sesame oil. I bought it recently to add to the lentil/quinoa combination and I’m seriously in love. It has this super fragrant, nutty quality about it and I think it would be great in salad dressings or marinades as well. At first I cringed at having to buy a somewhat obscure (at least to me) ingredient for a recipe I was making but now I’m so glad I have it in my pantry. Love when that happens!
Okay and last but not least-you guys know I have to include some type of sweet dessert. If you’ve ever tried Justin’s nut butters, then you probably don’t even need an explanation for these. But if you haven’t-run to your nearest Whole Foods and purchase some ASAP. I really don’t love almond butter but his is so delicious and addicting. So when I saw it sandwiched between chocolate in a peanut butter cup, I was pretty excited. Needless to say, these are awesome.
