Okay so today was supposed to be foodie pen pal reveal day but I still haven’t received my foodie pen pal package. Sad. But the good news is I’m freakishly organized and always over-prepared so I have a great recipe to share with you anyway!
So I’m a big fan of rice krispie treats, especially when they have fun add-ons like peanut butter or heath bar. Now that summer weather is upon us (hello 90 degrees, I forgot what you felt like), I immediately gravitate towards summery desserts. And aside from fruit-themed tarts and bars, summer desserts make me think of s’mores. AKA the greatest invention of all time. Whoever originally declared that a graham cracker, toasted marshmallow and melty square of chocolate tasted good was a serious genius.
Now I know you can make s’mores in the oven or microwave but it’s just not the same as getting that toasty goodness from a fire. And since Seth and I don’t really have access to any camp fires or fire pits in the good old city of brotherly love, these s’mores treats are perfect. All the flavors of a s’more without even turning on your oven. And they seriously rock your taste buds.
The ingredients list is super simple. Golden Grahams cereal, marshmallows, butter, milk chocolate chips and these new and seriously awesome jet puffed mini marshmallows. Have you guys seen these? So far the only place I can find them is Target but they are these little miniature marshmallows that have a little bite to them and they stay chewy even if you bake them into cookies or bars. They were the perfect addition to these s’mores treats because it makes the marshmallows pop a little.
So this starts out like any other krispie treat recipe. Melt the butter and marshmallows (the soft ones, not the jet puffed!) in a pan until it’s all melty. Then, stir in your golden grahams!
Now I probably should mention here that before you start, you want to put your milk chocolate chips in the freezer for about 20 minutes. This helps to prevent them from melting in your mixture and turning the whole thing into a brown mess. They still taste good, but they don’t look as pretty.
So once you stir in your cereal, add in your chocolate chips and jet puffed marshmallows and quickly(!) stir them in. Don’t over-stir or the chocolate will really start to melt. Just give them a quick little mix and then pour the whole thing into a lightly greased 9×11 baking dish.
You can use a piece of wax paper to press down on the top and make it even, but don’t worry too much about it because once the bars are set, you’re going to turn the pan upside down and pop the treats out all in one block so that the new “top” of the bars is what was on the bottom in the pan. This makes for a really even looking treat. If you’re OCD like me, you appreciate these things.
Use a super sharp knife and cut them into squares. That’s it! And they are SO GOOD. I’ve brought them to a few family events and people seriously gobble them up. A perfect s’more when you can’t have a campfire
- 1/4 cup butter
- 1 bag of marshmallows
- 1 box of golden grahams cereal (about 7 cups)
- 1 bag of milk chocolate chips
- 1.5 cups of jet-puffed marshmallow bits
- Before you begin: Place chocolate chips in the freezer for at least 20 minutes
- Lightly grease a 9x11 baking dish and set aside
- Melt butter and regular marshmallows in a saucepan until smooth
- Stir in cereal until evenly coated with the marshmallow/butter mixture
- Quickly stir in chocolate chips and jet-puffed marshmallow bits. Do not over mix!
- Pour entire mixture into baking dish and use a piece of waxed paper to even out the top
- Once the bars have set (about an hour), turn the pan over and invert the bars onto a flat surface so that the bottom part in the pan is now the top
- Cut into squares
- Store in a cool area in an airtight container
